Day 1

Day 1 Saturday, June 11th

The day started off a bit slow. We had expected and anticipated a slow start. We made an effort to begin our new eating approach on a Saturday because of my husband’s work schedule. We started off a day late, we slept in a bit. We had a fruit salad for breakfast and it was tasty. We will also make an effort to keep our water intake to 8 to 14 cups a day (we are water freaks and normally drink around 10 to 14 cups daily). See the pic of our yummy fruit salad.

For lunch we juiced. Our juice was wonderful and colorful. Our juice included two peaches, a mango, a wedge (1/4) a pineapple, two stalks of celery, a small cucumber, an apple, and a pear. Look at the pretty picture of the tasty, nutritious, and colorful juice created.


Ironically we were full most of the day. We did have a snack, we shared an apple, a handful of carrots, and I had a handful of green olives. The physiological impact of processed foods was probably the hardest part of day one. You see fast food or processed food advertisements placed in every batch of commercials, on the radio, on billboards, and online. You simply cannot escape unhealthy foods and they seep into our subconscious which makes us crave it even more. So this new way of eating, thinking, and living will take some time to get used to.

Dinner was a wonderful and large spinach salad with a rice vinegar, apple cider vinegar, and lemon juice dressing. A pic of the salad is below and includes spinach, tomato, mushroom, vidalia onion, daikon radish, green olives, pickles, radish, and a sparse teaspoon of dried cranberries.



Snack: We finished the night off with a cup of white tea with a tablespoon of sour wood local honey. Can you say Y-U-M-M-Y?!

Overall: We were really calm throughout the day. Surprisingly we felt full and physically satisfied most of the day. We realized the physiological part of eating may be our biggest challenge to conquer or rather to manage. Our energy level has been steady to our surprise.
